Raspberry Lemon Coconut Cake

I use to eat coconut cakes at my Grandma’s house growing up amongst some other amazing cakes she made like red velvet, german chocolate, and chocolate cake with pecans.  So, I figured I would tantalize my taste buds and make a Raspberry Lemon Coconut Cake for a twist on just plain coconut cake. This is my jazzed up rendition of my Grandmothers cake and I must say its the bomb.com!

Ingredients
Duncan Hines Lemon Supreme Cake Mix
4 Large Eggs
1 1/3 Cups of Milk
1/3 Cup of Butter
1 tsp of Vanilla
1/2 Cup of Raspberry Seedless Jam (You can add more if you desire)
1/2 Cup of Coconut
1 Package of Raspberries
Lemons

Lemon ButterCream Icing
1 Cup of Sugar
4 Large Egg Whites
3 Stucks of Unsalted Butter (room temperature)
1/4 Cup of Fresh Squeezed Lemon Juice
1 tsp of Pure Vanilla Extract

Pre-heat your oven to 350 degrees. Follow the Directions on your Duncan Hines Lemon Supreme Cake mix box. The only difference is you will be substituting water for milk, butter for oil, and 4 eggs instead of 3 eggs. Mix ingredients according to the box directions. Spray your round cake pans with pam and line with parchment paper. You will need to cut your parchment paper in a circle to fit into your round cake pan. Evenly pour your cake batter into your pans and bake for 20-25 minutes according to the box directions. You will want to stick a toothpick in the center of the cake and if it comes out clean upon removing it then your cake is ready to remove from the oven. Allow, your cakes to cool while preparing your lemon buttercream icing.
To prepare the Lemon Buttercream icing you should combine the sugar and egg whites over a double boiler whisking until the ingredients are blended and sugar is melted. You can create a double boiler by placing a bowl on top of a pot with boiling water on the stove top. Make sure you are whisking constantly and when the sugar is melted remove from stove and whisk until you have a glossy meringue. Pour into your bowl with hand mixer or stand mixer beating for a few minutes. Then add your butter one stick at a time beating for a total of 8-10 minutes. It will appear lumpy but don’t fret it will soon pass this lumpy phase and become a velvety texture. Once its smooth and and the texture of buttercream icing stir in your lemon juice and vanilla and you are ready to frost.
Take your bottom layer of cake that’s cooled and spread your raspberry jam on. Next, put some of your lemon buttercream icing into your piping bag and pipe your icing in circles starting in the center until you have covered the raspberry jam. Add your top layer of cake and spread on your remaining icing (until smooth all sides), sprinkle with coconut, and line with raspberries. WOWZERS its RICH & DECADENT!

St. Patricks Day Cookie Pops

Quick & Easy Mint Oreo Cookie Pops! These cookie pops could be created to match any festive holiday ! 🙂

Ingredients
Mint Oreo Cookies
White Chocolate
Green Sugar/Sprinkles
Sucker Sticks

Set up your candy station. Melt your white chocolate. Stick your sucker sticks in each oreo, dip them into the melted chocolate, and sprinkle with your green candy sugar. You can allow to dry on wax paper but I find that allowing them to dry in a colander works best!

Lucky Charm Pancakes

I’M BAAAAAAAAAAACK! Sorry for the lack of post but GREAT THINGS TO COME!

I love holidays and especially St. Patricks Day seeing how I have a little Irish in me and I’m not just talking about the fact that a girl likes to have a drink or three on occasion! I couldn’t wait to make these festive pancakes because they are seriously “MAGICALLY DELICIOUS”! I robbed my Lucky Charms cereal box for the marshmallows because they add a sweet surprise when you bite into the pancake. These little guys are easy to make and a hit with adults and kids! Who wouldn’t love green pancakes and marshmallows in the morning!?!

Ingredients
2 Cups Original Bisquick Mix
1 Cup of Milk
1 tsp of Vanilla
1 tsp of Green Food Color
2 Eggs
1/2 Cup of Lucky Charm Marshmallows
Whipped Cream Topping

In a large bowl mix together your bisquick mix, milk, vanilla, eggs, and food color until mixed well. Then stir in your lucky charm marshmallows (you can always add extra marshmallow lovers). Heat your skillet over med-high heat and add butter. After, I heat my pan I like to turn it back down to a low heat because pancakes tend to burn quickly if your not careful. Take a 1/4 cup of pancake mix and pour your batter into your skillet. Pay close attention when you start to see bubbles on top of the pancake its about time to flip (you want to make sure its a golden brown color underneath first and then flip). Then plate your pancakes, add your whipped topping, and sprinkle with extra marshmallows! You can also make a cream cheese pancake topping or serve with warm maple syrup. Erin Go Bragh!

Oscar Night Snacks

It’s Oscar Night and here are some quick snacks to to keep you entertained! I made a Candied Bacon, Truffle Popcorn, and Tequila Sangria! Perfect for just you or if you have guest stopping by…

Candied Bacon
Thick Cut Bacon
1 Cup of Brown Sugar
1 tbsp of Red Pepper Flakes
Put your brown sugar and pepper flakes in a pie dish or a deep dish so you can mix it all around and then lay your bacon into the mixture coating each piece of bacon. You can cook your bacon in the oven on 400 12-17 minutes until crispy on a broiler pan or you can cook on the stovetop in a cast iron skillet. It has a nice sweet sticky flavor from the carmalized brown sugar and a tiny kick from the red pepper flakes.

Truffle Butter Popcorn

You can pop with fresh kernels or you can take the shortcut and use the store bought popcorn you pop in the microwave. I used a regular size bag of butter flavored (you can use plain too) and after popping place in a big bowl. Melt 1 tbsp of butter and add 1/4 tsp of truffle oil. Pour over your popcorn and stir it all around. Then add 1/4 cup of crushed parmigiano reggiano and sprinkle with dried parsley. It’s such a tasty treat!

Tequila Sangria
Tequila
Peach Schnapps
Red Wine (fresh & fruity)
Pineapple Juice
Orange Juice
Simple Syrup (equal parts sugar & water melted)
Fresh Blackberries & Pineapple
In a shaker add 2oz or 4 tbsp of tequila. Add 2 tbsp of peach schnapps, simple syrup, and pineapple juice. Add a splash of orange juice and shake well. Pour over ice, pour red wine on top and garnish with blackberries and pineapple. DELICIO-SO!

Breakfast Stromboli

Good Morning!
Top of the Morning! Whatever your preference is to say…Happy Saturday REGARDLESS! 🙂
Breakfast is a MUST for me or I don’t function correctly and most mornings its oatmeal or something quick, except lately I’ve really been cooking it up for the book!
Anyways, this morning I made a SIMPLE turkey sausage, eggs, cheese, and croissant breakfast by pre-cooking my ingredients and placing them down the center of rolled out croissants. Placing slits on both sides and braiding over to create a breakfast stuffed croissant.
It’s like a BREAKFAST STROMBOLI! Pillsbury to the rescue on those morning you just don’t want to do anything from scratch yet you want something warm in the tummy!

Ingredients

1 Can of Pillsbury Croissants
Pre-Cooked Turkey Sausage
5 Eggs
Sharp Cheddar Cheese
Crack eggs into bowl, add a splash of milk and beat well with a fork. Mix well and scramble in a pan. Roll out your croissants onto a baking sheet pinching the perforated edges so that the ingredients don’t seep out. Place scrambled eggs down the center of the rolled out croissants. Add as much pre-cooked turkey sausage as you like (I added a 1/2 of cup). Sprinkle with cheese. Now, take a knife and cut slits down both side of your rolled out croissant so that you can braid them over the ingredients in the center. Fold the dough over to cover your ingredients to create a stromboli look and brush the top with a egg wash to get that nice golden brown color. Pop into your 350 degree oven for 20 minutes and ENJOY! The warm ingredients with the gooey cheese and buttery flavor of the croissant is HEAVENLY!

Happy Valentines Day

Happy Valentines Day! I hope EVERYONE has a WONDERFUL DAY even the one’s who think its a silly holiday! It’s one more reason to celebrate “US” AMAZING WOMEN! I kicked off my morning with a heart inspired V-Day Breakfast in the spirit of Valentines Day. I cooked turkey bacon, heart shaped sunny side up egg, heart shaped potatoes, grapefruit, orange, and I garnished with parsley for color! I have a heart shaped mold that allowed me to make the sunny side up egg and I used a heart shaped cookie cutter to make the heart shaped potatoes! Ta-Da! You now have a V-Day inspired breakfast. 🙂

I am that girl, that “festive girl” who enjoy holidays and all their treats! I decided to indulge and make some Valentine Day Treats that I would like to share with YOU! Easy Step-by-Step instructions below:

Ingredients
White Chocolate
Milk Chocolate
Mini Chocolate Morsels & Nuts
Coconut
Red & Pink Sugar
Black Candy Gel
Lay out your wax paper. Melt your chocolates and set up you work station. Dip your strawberries into your chocolates and decorate by dipping into colored sugar, coconut, chocolate morsels & nuts, or dip into both chocolates and decorate with black candy gel to look like a tuxedo! These are always a hit and they carry more meaning being homemade vs. store bought! 🙂

Ingredients
1 Box Duncan Hines Red Velvet Cupcake Cake & Frosting Mix
Eggs
Milk (replace water with milk)
Canola Oil
Butter
Follow the directions on the back of the box. Mix cake mix, eggs, milk, and oil. Place in 12 cupcake liners and bake according to box. Allow to cool. Then mix butter, water, and cream cheese frosting until smooth. Place in piping bag and fill each cupcake then draw X’s & O’s onto your cupcakes! Wa-La!

Pink Heart Whoopie Pies

Ingredients
1 Box Classic White Cake
Milk (replace water with milk)
Butter (replace oil with butter)
Eggs
Pink Food Color
Icing
2 Sticks of Unsalted Butter
1 tsp of Vanilla
3 Cups of Powdered Sugar
2 tbsp of Heavy Whipping Cream
Pre-heat oven to 350 degrees. Mix your ingredients according to the back of the box but substitute the milk and butter in place of the water and oil. Mix really well until no lumps and place in a piping bag (homemade or store bought piping bag). Once, its mixed well add your pink food color until you reach your desired pink color. Take a baking sheet and line with parchment paper. Now take a hear shaped cookie cutter (any size of your choice) and draw hearts onto your parchment paper. This will be the outline that you pipe your batter into to bake. Take your piping bag and pipe your batter in the shape of a heart inside of your outlined heart. You want to stay an inch or more away from the lines. The batter expands when it bakes. Now, pop into your oven and bake for 8 minutes. Place on a cooling rack or a counter top with wax paper to cool. Finish baking your remaining batter. Once cooled make your icing, place into a piping bag and fill your hearts! You now have a whoopie Pie!
