Lucky Charm Pancakes

I’M BAAAAAAAAAAACK! Sorry for the lack of post but GREAT THINGS TO COME!

I love holidays and especially St. Patricks Day seeing how I have a little Irish in me and I’m not just talking about the fact that a girl likes to have a drink or three on occasion! I couldn’t wait to make these festive pancakes because they are seriously “MAGICALLY DELICIOUS”! I robbed my Lucky Charms cereal box for the marshmallows because they add a sweet surprise when you bite into the pancake. These little guys are easy to make and a hit with adults and kids! Who wouldn’t love green pancakes and marshmallows in the morning!?!

Ingredients
2 Cups Original Bisquick Mix
1 Cup of Milk
1 tsp of Vanilla
1 tsp of Green Food Color
2 Eggs
1/2 Cup of Lucky Charm Marshmallows
Whipped Cream Topping

In a large bowl mix together your bisquick mix, milk, vanilla, eggs, and food color until mixed well. Then stir in your lucky charm marshmallows (you can always add extra marshmallow lovers). Heat your skillet over med-high heat and add butter. After, I heat my pan I like to turn it back down to a low heat because pancakes tend to burn quickly if your not careful. Take a 1/4 cup of pancake mix and pour your batter into your skillet. Pay close attention when you start to see bubbles on top of the pancake its about time to flip (you want to make sure its a golden brown color underneath first and then flip). Then plate your pancakes, add your whipped topping, and sprinkle with extra marshmallows! You can also make a cream cheese pancake topping or serve with warm maple syrup. Erin Go Bragh!

Breakfast Stromboli

Good Morning!
Top of the Morning! Whatever your preference is to say…Happy Saturday REGARDLESS! 🙂
Breakfast is a MUST for me or I don’t function correctly and most mornings its oatmeal or something quick, except lately I’ve really been cooking it up for the book!
Anyways, this morning I made a SIMPLE turkey sausage, eggs, cheese, and croissant breakfast by pre-cooking my ingredients and placing them down the center of rolled out croissants. Placing slits on both sides and braiding over to create a breakfast stuffed croissant.
It’s like a BREAKFAST STROMBOLI! Pillsbury to the rescue on those morning you just don’t want to do anything from scratch yet you want something warm in the tummy!

Ingredients

1 Can of Pillsbury Croissants
Pre-Cooked Turkey Sausage
5 Eggs
Sharp Cheddar Cheese
Crack eggs into bowl, add a splash of milk and beat well with a fork. Mix well and scramble in a pan. Roll out your croissants onto a baking sheet pinching the perforated edges so that the ingredients don’t seep out. Place scrambled eggs down the center of the rolled out croissants. Add as much pre-cooked turkey sausage as you like (I added a 1/2 of cup). Sprinkle with cheese. Now, take a knife and cut slits down both side of your rolled out croissant so that you can braid them over the ingredients in the center. Fold the dough over to cover your ingredients to create a stromboli look and brush the top with a egg wash to get that nice golden brown color. Pop into your 350 degree oven for 20 minutes and ENJOY! The warm ingredients with the gooey cheese and buttery flavor of the croissant is HEAVENLY!

Banana Nut Pancakes

Today happens to be “National Pancake Day” so I couldn’t help myself when deciding what to make for breakfast! I-hop apparently gives away free pancakes away all day but they are no match for me! Ha, I will make my own ;0) …

Ingredients
2 Cups of Buttermilk
3 Eggs
1 1/2 tsp of Vanilla
2 Cups of All Purpose Flour
1 1/2 tsp of Baking Powder
1 tsp of Baking Soda
1/4 Cup of Sugar
Pinch of Salt
1 Cup of Toasted Pecans
1/2 Stick of Melted Butter
2-3 Ripe Bananas

In a large bowl mix together your buttermilk, eggs, and vanilla. In a separate bowl mix flour, baking powder, baking soda, sugar, and salt. Now mix your dry ingredients into your wet ingredients mixing until there are no lumps. Toast your pecans in a heated oven for a few minutes. Take the stick of melted butter and 1/2 of the toasted pecans and stir into your pancake batter. Now, mash your bananas in a bowl and fold them into your pancake batter. Cook in a buttered pan on a medium to medium-high heat until golden brown on both sides. Stack them however high you desire, sprinkle with powdered sugar, toasted pecans, and drizzle with syrup! I like to heat my syrup before pouring over it just taste better! You could also make a cream cheese glaze if you really wanted to go NUTS and pile on the calories! YUMMERS!

Classic Breakfast w/ A Presentation Twist

A Classic Breakfast with a twist! I grew up in the south on eggs, bacon, cheese grits, and homemade biscuits. Grits ( AKA Girls Raised In the South) are a staple in the south and no matter where I relocate my grits come with me! I wanted something warm to eat because its 3 degrees outside today. Yes, you heard me correctly its freaking freezing! What’s better than a warm breakfast to warm your soul on a cold cold day? I’ve claimed my love for presentation through previous post so I decided to step it up a notch this morning by presenting the classic breakfast in a different light.  I took a can that held tomatoes and discarded of the tomatoes into a tupperware container for another day and I cut out both ends of the can leaving a perfectly round cylinder.

Ingredients
Eggs
Grits
Sharp Cheddar Cheese
Pancetta

Make your grits according to the instructions on the container and melt cheese (for cheese grits lovers). Scramble your eggs and set aside. Cook your pancetta in a pan until lightly brown and crispy (drain remaining grease on paper towel). Take your cylinder open at both ends and place it on your plate that you will be serving on. Place cheese grits in bottom, layer scrambled eggs on top, and lastly top with pancetta. Make sure you pack it down in there tightly so it forms a nice firm mold. Carefully, remove your cylinder and ta-da you have a beautiful presentation! I completed my dish with a slice of cinnamon raisin toast lightly brushed with carmel sea salt butter for that extra little kick of flavor. Complete Yumminess!

Healthy Breakfast

I don’t always eat unhealthy! I mix it up all the time with foods that are rich in flavor (that I cut ZERO corners or calories on) and protein packed healthy dishes. Moderation is the key word in my life and lifestyle so that I can enjoy all of life’s little pleasures. I know everyone has kicked off their New Year Resolutions which mostly consist of working out and eating healthy so I promise to incorporate some healthy dishes here. This morning I kept it simple and who said simple had to mean boring? I had 100% whole wheat toast lightly buttered with egg whites, topped with baby spinach and melted mozzarella (there are no exact measurements prepare what you will eat). I paired it with Greek Gods Honey Yogurt and Fresh Pomegranate to add some color to my plate (I happen to love presentation).  It was scrumptious!

Pancetta & Fried Egg English Muffin

Happy New Year! I kicked off my morning with an open face fried egg english muffin with pancetta, mushrooms, and hollandaise! Deeeeeee-licious!

Ingredients

1 Large Egg
Pancetta
English Muffins
Mushrooms
Hollandaise
Milk
1/4 Cup of Butter

I bought the pancetta thats pre-diced in a package and placed 2 tbsp (I’m cooking for myself today) in a heated skillet on medium heat. I threw in a handful of mushrooms and cooked until the pancetta is nice and brown and crunchy. Set to the side on a paper towel to absorb any extra grease off the pancetta. In the same pan I fried one egg. I used the Knorrs Hollandaise package and made it according to the directions on the pouch (mix in small sauce pot with package, 1 cup of milk, and 1/4 cup of butter). I lightly toasted and buttered my english muffin. Place your english muffin on your plate, place fried egg on top, put your mushrooms and pancetta on top of the fried egg, and drizzle with hollandaise. You have yourself a delicious breakfast! 🙂
