Cake Batter Energy Bars

“No Bake” Protein Bars made right in your kitchen that taste like cake batter! This recipe comes from (chocolate covered katie blog) and when I read it I was thinking to myself healthy and taste like cake batter? Ok, lets give this one a GO!
Ingredients
1 cup of rice crispies (brown or white)
1/2 cup of packed oat flour
1 tsp pure vanilla extract
1/2 tsp salt
2 tbsp roasted cashew butter (I substituted almond butter b/c my store was out of cashew but try & find cashew butter b/c supposedly really gives the cake batter flavor)
5 tbsp agave (honey works for strict vegans)
sprinkles (optional)
replace up to 1/2 of the oat flour with your favorite protein powder (optional…I substituted with my vanilla protein powder)
Combine all dry ingredients and stir well. In a separate (large) bowl, combine wet and stir to form a thin paste. If your almond butter (cashew butter) is cold, warm it up a little for easier mixing. Pour dry into wet (not the other way around) and stir until evenly coated. Line a baking dish or tupperware container with a large piece of wax paper and pour the mixture into the dish. Fold the extra paper over the mixture and squish down as hard as you possibly can! Use a heavy object to really press it down. (The mixture will fill a 7×5, or about 2/3 of an 8×8.) Mine would of appeared thicker but my smallest pan was larger than the one needed. Stick in the fridge or freezer to harden before cutting into bars. Store in the fridge or freezer. Makes 6 bars. You get a protein packed snack with a few simple ingredients to curve your hunger! Yay, for cake batter energy bars!
