Chicken Meatloaf

Not a meatloaf person? I’m not by any means even though it was a regular dish served when growing up in Georgia. I’m always looking for new healthy recipes to keep variety in my life and I discovered an unbelievable chicken meatloaf. It’s easy and its healthy! I served it with a cauliflower mash and roasted asparagus….it doesn’t get much cleaner than this meal. Safe to indulge and keep your girlie figure! 🙂


1 lb ground chicken
1/2 cup fine breadcrumb
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seed
1 teaspoon salt
1/8 teaspoon pepper
I had mushrooms and jalapeno in the fridge so I added a little of both as well. You can add or substitute other ingredients according to your taste buds.


Preheat oven to 350 degrees. Saute ground chicken and combine in a large bowl with bread crumbs,. carrots, and onion. Add mixture to chicken bowl with the remaining 7 indgredients. Mix well with hand and place in a loaf fan sprayed with pam. Cover with foil and bake for 1 hour. Remove foil and continue baking for 15-30 minutes until cooked through!
