Coffee Cake

Good Morning! I wanted to indulge this morning and treat myself to something sweet so I decided to make a coffee cake and its absolutely positively delicious! Oh, and simple to prepare which is the best part πŸ™‚ Make it for your guest and they will swear it took hours or came from the bakery! Although, I’m not really sure why its called coffee cake other than the fact you may drink a cup of coffee with it because there is no coffee in the recipe.
Recipe as Follows:
1/2 cup of pecans
1/2 cup of parkay
1/2 cup of brown sugar / splenda blend OR you can do 1 cup of brown sugar
2 tablespoons of water
2 cans of biscuits (10 in a can)
Heat oven to 375 degrees
Open biscuits and pull apart each biscuit and roll into balls. There should be 20 balls per can (40 total when done rolling into balls). Melt a tiny bit of parkay and pour into bundt pan, sprinkle with some nuts. Continue to melt and stir the remaining ingredients in a sauce pot. Take 20 of the biscuit balls and place in bundt pan. Pour over melted mixture. Layer the next 20 biscuit balls and pour remaining mixture. Pop in the oven and cook for 20 to 25 minutes. Have a little cup of coffee and a slice of heaven! πŸ™‚
